Bircher Muesli Recipe

You are what you eat.  A large part of my job is making sure that people are eating as healthy as possible.  I don't expect perfection, but there are lots of little ways to improve your overall health by paying attention to what you eat and making good food choices.  I'm a regular person with a busy life, so I have developed lots of tricks and recipes to keep myself and my family eating healthy foods even when we are short on time.  One of my favourite recipes for a healthy breakfast is this Bircher Museli Recipe which I've adapted from Toronto cookbook author Bonnie Stern.  It's delicious and I can make it Sunday and eat it all week long!

2.5 cups oats

1/2 cup milk (cow, soy, almond, or any other will work)

1 apple - grated

3/4 cup orange juice

3/4 cup plain yogurt (coconut or soy yogurt would also work here, or you could just add extra non-dairy milk if you live dairy-free)

2 cups berries (fresh or frozen)

Mix all ingredients together in a bowl, cover and refrigerate overnight - enjoy in the morning and all week long!

Feel free to add quinoa flakes, chia seeds, ground flax seeds, or anything you like to fit your taste buds.
