Custard Oatmeal Recipe

I must be into custard these days, as I couldn't wait to share my new favourite breakfast recipe, and last month was a custard recipe as well! I've started making this oatmeal at least once per week, mostly because my 7 year old son keeps asking for it and I just can't say no!  I tend to shy away from smoothies in the winter and want warmer, heartier foods to keep warm in the Toronto cold.  This recipe isn't perfect, but healthy enough to keep me happy.  It makes 4 servings so it usually lasts a couple of days in the fridge, depending on who's eating what in my house for breakfast. I hope you enjoy it as much as me and my family do! Maple Custard Oatmeal 1 cup whole oats 2.5 cups milk or milk alternative (I've made it with both cow and almond milk) 3 eggs 1 tsp vanilla 1/4 cup maple syrup 1.  Whisk eggs, milk, oatmeal, maple syrup, and vanilla together over medium low heat.  Stir regularly and cook for about 15 minutes, until very creamy. 2. Top with fruit & nuts and enjoy!
