As most of my patients know, I'm all about moderation. I often have kale smoothies for breakfast, but also enjoy dessert on occasion! When I bake muffins, I usually try to incorporate whole grains and vegetables so that my family gets some extra nutrients and fibre. I recently came across this grain free banana muffin recipe that a fellow Naturopathic Doctor posted on Facebook and though I was skeptical, I thought I'd try it. It was delicious! It freezes well! So I thought I should share...
1 cup nut butter (I used a combo of home made sunflower seed butter and organic no sugar added peanut butter)
2 eggs
3 ripe bananas
1/2 tsp baking soda
1 tbsp apple cider vinegar
- blend together in the blender until smooth (don't try to mix by hand, it doesn't work - I tried!)
- pour into a greased muffin tin and top each muffin with a few chocolate chips
Bake at 400F for 15-20 min
